Chef’s Recipe: Parsley Puri and Moong Pakoda Subzi

It’s tough to get the kids to eat healthy but you can be a bit experimental and try out these tasty, healthy recipes by Chef Ranveer Brar, the host of Zee Khana Khazana’s Breakfast Xpress.

Ingredients:
For the dough
Wheat flour 2 ½ cups
Ginger garlic paste 1 ½ tbsp
Cumin powder 1 tsp
Butter 1 cup
Green chilli paste 1 tsp
Curd ¼ cup
Boiled parsley paste ¼ cup
Oil for frying

For the chutney
Raw mangoes 2
Tomatoes 2
Red chilli powder ½ tsp
Ginger garlic paste 1 tsp
Green chilli paste 1 tsp
Oil 1 tsp
Salt to taste

Method:
• In a bowl add wheat flour, ginger garlic paste, cumin powder, butter, green chilli paste, curd, boiled parsley paste and knead into dough.
• Set the dough aside and let it rest for 10 minutes.
• Make small dumpling-like portions of the dough.
• Roll them out like puris.
• Deep fry them in hot oil and drain them on a sheet of tissue paper.
• To prepare chutney, peel and dice the raw mangoes
• Dice the tomatoes, add the raw mangoes and puree
• Add ginger garlic paste, green chilli paste, oil, salt and red chilli powder and blend until it reaches a smooth consistency.
• Serve hot Parsley Puris with the chutney.

Moong Pakoda Subzi12710Moong-Pakoda-Subzi

Ingredients:
Soaked green moong dal 1 ½ cup
Finely chopped onions ½ cup
Minced ginger 2 tbsp
Garlic 7 – 8 cloves
Carom seeds 2 tsp
Coriander seeds 2 tsp
Gram flour 2 – 4 tbsp
Roasted cumin powder ½ tsp
Red chilli powder 1 tsp
Raw mango powder 1 tsp
Chopped coriander 1 tbsp
Salt to taste

For the dipping sauce
Oil 1 tbsp
Cumin seeds 1 tsp
Ginger garlic paste 1 tbsp
Onion paste 1 tbsp
Coriander powder 1 tsp
Turmeric powder 1 tsp
Red chilli powder 1 tsp
Tomato puree 1 tsp
Chopped coriander 1 tbsp
Curd ¼ cup
Tomatoes 2
Salt to taste

Garnish
Fried Papad

Method:
• Blend green moong, finely minced onions, ginger, garlic, cloves, carom seeds, coriander seeds, water and gram flour.
• Remove this mixture to a bowl and add gram flour, roasted cumin powder, red chilli powder, raw mango powder, chopped coriander, salt and mix well.
• Shape the prepared mixture into small one-inch balls and fry them in hot oil.
• Drain them on tissue paper.
• To prepare sauce heat oil in a pan. Add cumin seeds, ginger garlic paste, onion paste, coriander powder, turmeric powder, red chilli powder, tomato puree and curd and mix well.
• Chop tomatoes and add to the pan.
• Add salt and coriander and mix well.
• Garnish with fried papad and serve.
