Chef’s Recipe for Little Valentines: Be My Date Muffins

Home-baker, Sanaa A’esha, tells Navya D’Souza just how the tiny-tots of the world can score a sweet date this Valentine’s Day.

Be My Date Muffins
SanaaYou know that writer-wannabe author, Sanaa A’esha (@sanaaaesha), means serious foodie business when her Cucumbertown page declares, “When in doubt, cook.” Like many of us, mere mortals, this champion hula-hooper hates to share desserts and loathes having to wait for baked treats to cool before she can sink her pearly-whites into them.

For budding baking stars, this Valentine’s Day, Sanaa is sharing a recipe that “cannot fail.” So, if the kids are giving baking a go for the very first time there is no room for disappointment.

Ingredients:

Egg                           1

Oil                             ¼ cup

Milk                          ½ cup

Flour                         1 ½ cups

Sugar                        ½ cup

Baking Powder       2 tsps

Salt                            ½ tsps

Coconut                   ½ cup (grated)

Dates                          6 (chopped)

Method:

1. Preheat the oven to 400 Degrees Celsius.
2. In a small bowl, beat the egg until foamy.
3. Beat in the oil and milk.
4.In a separate bowl, sift together all the dry ingredients before stirring in the grated coconut and chopped dates.
5. Make a clearing in the middle of the dry ingredients, and then pour in the liquid ingredients.
6. Mix well with a fork until the dry ingredients have mixed sufficiently with the liquid mix.
7. Do not over beat the batter. It needs to be lumpy.
8. Fill in heart-shaped muffin cups with the batter.
9. Make sure that each cup in only a little more than half full.
10. Sprinkle a little sugar on top of the batter to add a little crunch.
11. Use ice-cream scoops to fill in the batter into the cups to ensure the batter is equally measured out for all the muffins.
12.Bake the muffins for 18 -20 minutes or until golden-brown.
13.You can test whether the muffins are done with a toothpick.
14.Serve warm.
