Are you planning to impress someone with a dessert? Then, Crepes with an orange butter sauce is an easy, yet delicious dish. Just be careful when preparing orange butter sauce.
Ingredients:
Crepe Butter
Milk 375 ml
Oil 75 ml
Eggs 5
Flour 175 gms
Salt 1 tbsp
Sugar Castor 120 gms
Orange zest 5 gms
Vanilla beans 2.5 gms
Vanilla essence 10 ml
Banana (optional) 2
Strawberry (optional) 100 gms
Whipped Cream (optional) 200 gms
Orange Butter Sauce
Icing Sugar 250 gms
Cointreau 190 gms
Butter 190 gms
Orange Juice 125 ml
Method:
Crepes
• Whisk milk with sugar and until the sugar dissolves in it.
• Add the remaining ingredients except orange zest and vanilla bean.
• Strain the batter.
• Set the batter aside for 30 minutes.
• Heat non-stick pan and ladle some of the batter onto the pan while simultaneously swirling the pan in a circular motion.
• Ensure that the batter coats the entire pan evenly.
• Cook the crepe for about two minutes, until the bottom is light brown.
• Loosen with a spatula, turn and cook the other side.
• Serve hot with diced bananas, strawberries, orange sauce and whipped cream
Orange Butter Sauce
• Make a caramel by heating icing sugar gradually in a non-stick pan.
• Once the icing sugar is caramelised, add half of the soft butter to it and stir it properly.
• Add Cointreau, orange juice and add remaining butter into it and mix it well.
• Let it come to a room temperature before using it as a topping for crepes.
The best part of this dessert is that you can customise these crepes according to your taste or the fruit you like the most. But, we do recommend trying it with orange butter sauce at least the first time. Bon appetite!
